I love Easter because it brings hope and signifies new life. It has always encouraged me to start fresh and better myself. Alan and I hosted this year and of course I was obsessed with planning and party throwing. It’s such a beautiful holiday to celebrate. I love everything about it. The colors, egg hunts, Easter bunny, time of year, weather, flowers, and obviously food. Usually we pick up a honey baked ham, but so many family members are vegan that it usually goes to waste. We ended up getting sandwiches and wraps catered from Panini Cafe. This is a southern California chain and WOW is it good. The sandwiches went quick. We also enjoyed lots of fruit and veggies, a bean salad, green salad, and too many snacks. It was a beautiful day spent with family, food, and fun.

I made these vegan peanut butter oat balls and they were gone quick!
- 2.5 cups gluten free rolled oats
- 3 tbsp PB powder
- 3 tbsp organic no-salt peanut butter
- 1 tsp vanilla
- 1/2 cup almond milk
- 1 tbsp chia seeds
- 1/4 cup maple syrup (optional)
Mix dry ingredients. Mix wet ingredients and then add dry ingredients + cacao nibs (or organic chocolate chips). Set in fridge for an hour and form into balls or egg shaped bites!
