Can you believe it’s already that time of year?! I spent Thanksgiving with my family in Aptos, California at a resort on the beach. This is a tradition we’ve been doing for years and always one that I look forward to. One thing that I especially loved was sharing all of our 2017 highlights. Each person took a turn, and I wanted to share mine with you. I stood up and said: “The biggest highlight for me this year was being able to heal my body through food, get off all medication, and reverse my symptoms of acid reflux and Barrett’s Esophagus.” It’s true, this has been a huge accomplishment for me.
Often times I get asked how I was able to do this. My answer is always the same: through food. Once I realized that food is medicine, my life forever changed. Module 13 was all about clean eating. This is not dieting or restricting. It’s not cutting calories. So what is it then? It’s eating real, whole foods, that are rich in nutrients and ones that provide fuel for your body. It’s eating fresh and organic if possible, with very limited processed foods or refined carbohydrates. It’s being mindful of what you’re putting in your body without obsessing over it. It’s balancing your plate with proper macronutrients (protein, healthy fats, complex carbohydrates) with lots of greens and fiber. Over the past year I’ve followed this approach and can honestly say I’ve never felt better. There’s no more drama around food. I’m able to live and enjoy meals without the guilt. Another perk is that since incorporating these changes, I no longer want the sugary, carb-loaded things I used to live off of. It’s amazing what the body can do. IIN has taught me that our bodies are designed to heal themselves by themselves if given the proper nutrients. I remind myself (and my clients) that every time we eat, we are either feeding disease or fighting it.
I believe that a major trigger for my SIBO (small intestinal bacteria overgrowth), acid reflux, and Barrett’s Esophagus was my addiction to sugar. If you want to read more about sugar and its effects, please refer to this blog post. I’m human and I’d be lying if I said I never eat sugar. That would actually be impossible unless I made every single thing I put in my body from scratch and didn’t allow myself to live a little. Sugar is in so much of what we eat. If you eat anything that comes in a box or use condiments or salad dressings, then you’re most likely consuming sugar. Part of clean eating is limiting sugar.
